Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups fresh spinach (optional)
- 1 cup heavy cream (or alternative)
Instructions
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and add the chicken. Cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet.
- In the same skillet, sauté onions until translucent. Add garlic and mushrooms; cook until tender.
- Pour in heavy cream and stir well. Let simmer until slightly thickened.
- Return chicken to the skillet, adding spinach if desired, and cook until wilted.
