- 1 cup dried figs (soaked if hard)
- 1 cup all-purpose flour (or whole wheat)
- 1/2 cup brown sugar (coconut sugar optional)
- 1/2 cup unsalted butter (cold, cubed)
- 8 oz cream cheese (full-fat preferred)
- 1/3 cup granulated sugar (sugar substitute optional)
- 1 tsp vanilla extract
- 1 large egg (or flax egg for vegan option)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour and brown sugar. Cut in cold butter until crumbly, then press into a greased 9×9 inch baking pan.
- Bake for 15 minutes until golden, then set aside.
- In another bowl, mix cream cheese, granulated sugar, vanilla extract, and egg until smooth. Stir in soaked figs.
- Pour filling over the baked base and return to the oven for an additional 30 minutes or until set.
- Cool completely before slicing into bars.
