  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken; cook until browned (5-7 minutes).
  3. Remove chicken; sauté onions for 3-4 minutes.
  4. Add garlic; sauté for another 1-2 minutes.
  5. Return chicken to pot; stir in broth.
  6. Mix in cream and milk; combine well.
  7. Season with basil, oregano, salt, black pepper, and red pepper flakes (if desired).
  8. Simmer on medium heat for 10-15 minutes.
  9. Stir in Parmesan until melted, followed by mozzarella.
  10. Add spinach, carrots, and celery; cook until tender (5-7 minutes).
  11. Taste and adjust seasoning as needed.
  12. Serve hot.
