Ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cups fresh spinach, chopped
- 1 medium carrot, diced
- 1 celery stalk, diced
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground chicken; cook until browned (5-7 minutes).
- Remove chicken; sauté onions for 3-4 minutes.
- Add garlic; sauté for another 1-2 minutes.
- Return chicken to pot; stir in broth.
- Mix in cream and milk; combine well.
- Season with basil, oregano, salt, black pepper, and red pepper flakes (if desired).
- Simmer on medium heat for 10-15 minutes.
- Stir in Parmesan until melted, followed by mozzarella.
- Add spinach, carrots, and celery; cook until tender (5-7 minutes).
- Taste and adjust seasoning as needed.
- Serve hot.
