Ingredients
- 12 ounces linguine (or other pasta)
- 4 cups sliced mushrooms
- 2 garlic cloves
- 1 shallot
- 1 ½ tablespoons extra virgin olive oil
- 1 tablespoon butter
- ½ – ¾ cup heavy cream
- 3 tablespoons miso paste
- ½ cup grated parmesan cheese
- Salt and pepper to taste
- Garnish: chopped roasted nori, red pepper flakes
Instructions
- Cook the pasta according to package instructions in salted water. Reserve some pasta water before draining.
- In a skillet over medium-high heat, add olive oil and sear the mushrooms until browned. Season with salt and pepper.
- Lower the heat and add butter, minced garlic, and diced shallot; sauté until fragrant.
- Stir in heavy cream, miso paste, and parmesan cheese until well combined. Adjust seasoning if necessary.
- Toss cooked pasta into the sauce, adding reserved pasta water gradually until desired consistency is reached.
- Serve immediately with roasted nori and red pepper flakes as garnish.
