  • 4 cups sliced mushrooms
  • 2 garlic cloves
  • 1 shallot
  • 1 ½ tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • ½¾ cup heavy cream
  • 3 tablespoons miso paste
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste
  • Garnish: chopped roasted nori, red pepper flakes

Instructions

  1. Cook the pasta according to package instructions in salted water. Reserve some pasta water before draining.
  2. In a skillet over medium-high heat, add olive oil and sear the mushrooms until browned. Season with salt and pepper.
  3. Lower the heat and add butter, minced garlic, and diced shallot; sauté until fragrant.
  4. Stir in heavy cream, miso paste, and parmesan cheese until well combined. Adjust seasoning if necessary.
  5. Toss cooked pasta into the sauce, adding reserved pasta water gradually until desired consistency is reached.
  6. Serve immediately with roasted nori and red pepper flakes as garnish.
