Ingredients
- 1 slice whole grain bread
- 2 eggs
- 1 tsp butter or olive oil
- Salt and pepper to taste
- 45 cucumber slices
- 3–4 slices ripe tomato
- Fresh parsley or green onion for garnish
Instructions
- Toast the whole grain bread until golden brown. Spread butter or mayonnaise on top.
- In a bowl, whisk together the eggs with salt and pepper. Heat a non-stick skillet over medium heat and add butter or olive oil.
- Pour in the egg mixture and stir gently until soft and fluffy.
- Slice cucumbers and tomatoes; arrange them on a plate. Garnish with fresh parsley or green onion.
- Place the scrambled eggs on the toast and serve immediately alongside the salad.
