Ingredients
- 170 g digestive biscuits
- 100 g melted butter
- 900 g softened cream cheese
- 200 g caster sugar
- 160 g sour cream
- 1 ½ teaspoons vanilla extract
- Pinch of salt
- 4 large eggs (lightly beaten)
- 50 g granulated sugar (for topping)
Instructions
- Preheat the oven to 180°C (350°F). Blend digestive biscuits and melted butter in a food processor until crumbly.
- Press the mixture firmly into the bottom of a springform pan to create an even crust.
- In a mixing bowl, beat together cream cheese and caster sugar until smooth. Add sour cream, vanilla extract, and salt; mix until combined.
- Gradually add lightly beaten eggs while mixing on low speed until just combined.
- Pour the filling over the crust and bake for about 60 minutes until set but slightly wobbly in the center. Cool completely before refrigerating for at least 4 hours or overnight.
- Before serving, sprinkle granulated sugar on top and use a kitchen torch to caramelize until golden brown.
