  • 170 g digestive biscuits
  • 100 g melted butter
  • 900 g softened cream cheese
  • 200 g caster sugar
  • 160 g sour cream
  • 1 ½ teaspoons vanilla extract
  • Pinch of salt
  • 4 large eggs (lightly beaten)
  • 50 g granulated sugar (for topping)

Instructions

  1. Preheat the oven to 180°C (350°F). Blend digestive biscuits and melted butter in a food processor until crumbly.
  2. Press the mixture firmly into the bottom of a springform pan to create an even crust.
  3. In a mixing bowl, beat together cream cheese and caster sugar until smooth. Add sour cream, vanilla extract, and salt; mix until combined.
  4. Gradually add lightly beaten eggs while mixing on low speed until just combined.
  5. Pour the filling over the crust and bake for about 60 minutes until set but slightly wobbly in the center. Cool completely before refrigerating for at least 4 hours or overnight.
  6. Before serving, sprinkle granulated sugar on top and use a kitchen torch to caramelize until golden brown.
