Ingredients
- 2 tbsp melted coconut oil
- 4 cups Brussels sprouts, halved or quartered
- 3 large carrots, cut into batons
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1/3 tsp salt
- 1/3 tsp black pepper
- 1 tbsp maple syrup
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine halved Brussels sprouts and carrot batons. Drizzle with 1 tablespoon of melted coconut oil.
- Add smoked paprika, garlic powder, ground coriander, salt, and black pepper to the vegetable mixture. Toss well to coat.
- Spread the seasoned vegetables evenly on a baking sheet and bake for about 20 minutes or until golden brown and crispy.
- Once cooked, remove from the oven and drizzle with maple syrup while hot. Toss gently before serving.
