Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy alternative)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes (russet or Yukon gold), peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme or Italian seasoning
Instructions
- In a skillet, heat olive oil over medium heat. Brown the Italian sausage until crumbled.
- Add diced onions to the skillet and sauté until softened, then stir in minced garlic for 30 seconds.
- Transfer the sausage mixture into a crockpot along with potatoes, chicken broth, salt, pepper, and thyme. Mix well.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are fork-tender.
- Stir in heavy cream before serving warm.
