- 1 English cucumber
- 1 1/2 cups shredded carrots
- 2 tsp minced garlic
- 1/4 cup chopped parsley or cilantro
- 1/4 cup sliced green onions
- 1 tbsp rice vinegar
- 1 tbsp apple cider vinegar
- 2 tsp low sodium soy sauce
- 1 tbsp sugar
- 1 tbsp honey
- 1 1/2 tbsp sesame seeds
- 1/16 tsp ginger
- 1/2–1 tsp crushed red peppers (optional)
- Salt and pepper (to taste)
- 2 tsp sesame oil
Instructions
- In a small bowl, whisk together soy sauce, rice vinegar, apple cider vinegar, sugar, honey, sesame oil, sesame seeds, crushed red peppers (if using), ginger, salt, and pepper until well combined.
- In a large bowl, combine sliced cucumber, shredded carrots, chopped parsley or cilantro, green onions, and minced garlic. Drizzle with sesame oil and toss gently.
- Pour the dressing over the vegetable mixture and toss until everything is evenly coated. Adjust seasoning as necessary.
