Ingredients

  • 1 English cucumber
  • 1 1/2 cups shredded carrots
  • 2 tsp minced garlic
  • 1/4 cup chopped parsley or cilantro
  • 1/4 cup sliced green onions
  • 1 tbsp rice vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp low sodium soy sauce
  • 1 tbsp sugar
  • 1 tbsp honey
  • 1 1/2 tbsp sesame seeds
  • 1/16 tsp ginger
  • 1/21 tsp crushed red peppers (optional)
  • Salt and pepper (to taste)
  • 2 tsp sesame oil

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, apple cider vinegar, sugar, honey, sesame oil, sesame seeds, crushed red peppers (if using), ginger, salt, and pepper until well combined.
  2. In a large bowl, combine sliced cucumber, shredded carrots, chopped parsley or cilantro, green onions, and minced garlic. Drizzle with sesame oil and toss gently.
  3. Pour the dressing over the vegetable mixture and toss until everything is evenly coated. Adjust seasoning as necessary.
