- 1 cup cooked quinoa

- 1 cup bell pepper (diced)
- 1 cup breadcrumbs (or gluten-free)
- 2 tbsp soy sauce
- Olive oil (for cooking)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, diced bell pepper, and breadcrumbs. Mix in soy sauce and seasonings.
- Form the mixture into patties about ½ inch thick and place them on a parchment-lined baking sheet.
- Drizzle olive oil over the patties and bake for 20 minutes or until golden brown and crispy.
