Ingredients
- 8–12 large mushrooms
- 1 (6-ounce) can of minced clams
- 1 finely minced green onion
- 1 beaten egg
- ½ teaspoon minced garlic
- ½ cup Italian-style breadcrumbs
- 2 tablespoons finely grated Parmesan cheese
- 2 tablespoons finely grated Mozzarella cheese (for stuffing)
Instructions
- Preheat your oven to 350°F (175°C) and lightly oil a baking dish.
- Clean the mushrooms and remove their stems.
- In a mixing bowl, combine minced clams, green onion, garlic, breadcrumbs, beaten egg, reserved clam juice, melted butter, oregano, and cheeses. Mix thoroughly.
- Stuff each mushroom cap with about 1½ teaspoons of the filling.
- Arrange the stuffed mushrooms in the baking dish, drizzle with melted butter, cover with foil, and bake for 35–40 minutes.
- Remove the foil, sprinkle remaining Mozzarella on top of each mushroom, and return to the oven until melted.
- Garnish with parsley and serve warm with lemon wedges.
