Ingredients

  • 812 large mushrooms
  • 1 (6-ounce) can of minced clams
  • 1 finely minced green onion
  • 1 beaten egg
  • ½ teaspoon minced garlic
  • ½ cup Italian-style breadcrumbs
  • 2 tablespoons finely grated Parmesan cheese
  • 2 tablespoons finely grated Mozzarella cheese (for stuffing)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly oil a baking dish.
  2. Clean the mushrooms and remove their stems.
  3. In a mixing bowl, combine minced clams, green onion, garlic, breadcrumbs, beaten egg, reserved clam juice, melted butter, oregano, and cheeses. Mix thoroughly.
  4. Stuff each mushroom cap with about 1½ teaspoons of the filling.
  5. Arrange the stuffed mushrooms in the baking dish, drizzle with melted butter, cover with foil, and bake for 35–40 minutes.
  6. Remove the foil, sprinkle remaining Mozzarella on top of each mushroom, and return to the oven until melted.
  7. Garnish with parsley and serve warm with lemon wedges.
