  • 2½ cups chocolate bear graham crackers
  • 7 tbsp unsalted butter
  • 150 g shredded kataifi dough
  • ¾ cup pistachio paste
  • 680 g cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1¼ cup chopped semi-sweet chocolate
  • ¾ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Combine crushed chocolate graham crackers with melted butter; press into a springform pan.
  2. In a skillet, melt butter and sauté chopped kataifi dough until golden brown. Layer over the crust.
  3. Beat cream cheese and sugar until smooth; add sour cream, pistachio paste, tahini, eggs, almond extract, vanilla extract, and salt. Pour over the kataifi filling.
  4. Bake for about 60 minutes until set but slightly jiggly in the center. Cool gradually in the oven for one hour.
  5. Heat heavy cream until simmering; pour over chopped chocolate and stir until smooth for ganache topping.
  6. Refrigerate cheesecake for at least four hours before serving.
