- 2½ cups chocolate bear graham crackers
- 7 tbsp unsalted butter
- 150 g shredded kataifi dough
- ¾ cup pistachio paste
- 680 g cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1¼ cup chopped semi-sweet chocolate
- ¾ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Combine crushed chocolate graham crackers with melted butter; press into a springform pan.
- In a skillet, melt butter and sauté chopped kataifi dough until golden brown. Layer over the crust.
- Beat cream cheese and sugar until smooth; add sour cream, pistachio paste, tahini, eggs, almond extract, vanilla extract, and salt. Pour over the kataifi filling.
- Bake for about 60 minutes until set but slightly jiggly in the center. Cool gradually in the oven for one hour.
- Heat heavy cream until simmering; pour over chopped chocolate and stir until smooth for ganache topping.
- Refrigerate cheesecake for at least four hours before serving.
