Ingredients
- 1 cup pancake mix
- ¾ cup milk
- 1 large egg
- 2 tablespoons vegetable oil
- 3 tablespoons maple syrup
- 4 large eggs (for filling)
- 4 slices American cheese
- 8 strips Turkey Bacon or 4 sausage patties
Instructions
- In a medium bowl, whisk together pancake mix, milk, egg, vegetable oil, and maple syrup until just combined. Allow the batter to rest for 5 minutes.
- Heat a non-stick skillet over medium heat. Lightly grease it and pour about 3 tablespoons of batter into ring molds to cook pancakes for 2-3 minutes until bubbles form. Flip and cook for another 1-2 minutes until golden.
- In the same skillet, crack eggs into molds (if using) and season with salt and pepper. Cover and cook for about 1-2 minutes or until desired doneness.
- Cook Turkey Bacon until crispy or heat sausage patties as per package instructions.
- Assemble each sandwich by layering a pancake, cheese slice, cooked egg, Turkey Bacon or sausage patty, and topping with another pancake.
