- 1 pound chicken breast (cut into small chunks)
- 1 tablespoon cooking oil
- 2 tablespoons butter
- 1/2 onion (finely chopped)
- 4 garlic cloves (minced)
- 1 1/2 cups broccoli florets
- 1 cup orzo pasta
- 3 cups chicken stock
- 1 1/2 cups cheese (1/2 cup parmesan, 1 cup cheddar)
- Fresh lemon juice
- Fresh herbs (basil, oregano, or parsley)
Instructions
- Heat cooking oil in a large pot over medium heat. Add chicken chunks seasoned with salt and pepper; cook until browned (about 5-7 minutes).
- Stir in butter until melted, then add onion and garlic; cook until onions are translucent.
- Incorporate broccoli florets and mix for about 2-3 minutes before adding the orzo.
- Pour in chicken stock; bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until orzo is tender.
- Remove from heat, stir in cheese until melted, then finish with fresh lemon juice and herbs.
