- Whole wheat flatbreads

- Fresh spinach leaves
- Red bell pepper, sliced

Instructions
- Wash and prep all your vegetables: slice the bell pepper and cucumber, grate the carrot, and slice the avocado.
- Lay out each flatbread on a clean surface. Drizzle with olive oil if desired, then spread hummus generously over each flatbread.
- Evenly distribute the spinach leaves over the hummus layer followed by red bell pepper slices, cucumber, grated carrot, and avocado.
- Roll each flatbread tightly from one end to another. Use plastic wrap to maintain tightness while rolling if needed.
- Remove the wrap (if used) and slice each roll into bite-sized pinwheels using a sharp knife. Arrange on a serving platter.
- Serve immediately or refrigerate until ready to enjoy.
