- 1/4 cup brown sugar (light or dark)
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon alcohol-free vanilla extract
- 1/3 cup eggnog
- 2/3 cup unsalted butter for frosting
- 3–4 cups powdered sugar
- 1/4 teaspoon nutmeg for frosting
- 1/2 teaspoon alcohol-free vanilla extract for frosting
- 1/4 teaspoon salt for frosting
- 3–5 tablespoons eggnog for frosting
- 1–2 tablespoons cornstarch (if needed)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, nutmeg, cinnamon, baking soda, and salt.
- In another bowl, cream softened butter with granulated and brown sugars until fluffy.
- Add egg yolks, vanilla extracts, and eggnog; mix well.
- Gradually combine dry ingredients with the wet mixture until just mixed.
- Scoop tablespoon-sized portions onto lined baking sheets and bake for 10 minutes until lightly golden.
- Cool on wire racks before frosting.
- For the frosting, beat butter with powdered sugar, nutmeg, vanilla extract, salt, and eggnog to desired consistency. Frost cooled cookies generously.
