Ingredients
- 1/2 cup shelled pistachios
- 1 egg
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1 cup milk
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 tbsp unsalted butter
- 2 tbsp pistachio paste
- 1 cup powdered sugar (for icing)
- Green food color (for icing)
Instructions
- Prep croissants for filling.
- Blanch pistachios in boiling water for 2 minutes; dry and remove skins. Blend until smooth.
- Heat milk and vanilla in a saucepan. In another bowl, whisk egg, sugar, salt, and cornstarch.
- Gradually add hot milk to the egg mixture, then return to heat until thickened into custard.
- Mix in butter and pistachio paste; blend until smooth. Chill for about 30 minutes.
- Prepare icing by mixing powdered sugar with milk and food color until drizzling consistency is achieved.
- Fill croissants using a piping bag fitted with a Bismark tip.
- Drizzle icing over filled croissants and garnish with chopped pistachios.
