  • 2 tbsp pistachio paste
  • 1 cup powdered sugar (for icing)

Instructions

  1. Prep croissants for filling.
  2. Blanch pistachios in boiling water for 2 minutes; dry and remove skins. Blend until smooth.
  3. Heat milk and vanilla in a saucepan. In another bowl, whisk egg, sugar, salt, and cornstarch.
  4. Gradually add hot milk to the egg mixture, then return to heat until thickened into custard.
  5. Mix in butter and pistachio paste; blend until smooth. Chill for about 30 minutes.
  6. Prepare icing by mixing powdered sugar with milk and food color until drizzling consistency is achieved.
