- 4 large egg yolks
Instructions
- Make the Tart Dough: Blend flour, powdered sugar, and salt in a food processor. Add cold butter until pea-sized pieces form. Mix in egg and vanilla until dough forms. Chill for one hour.
- Prepare Tart Shell: Roll out chilled dough, place it in a tart pan, trim edges, poke holes in the bottom, and freeze for 20 minutes.
- Bake the Crust: Preheat oven to 350°F (180°C). Bake for 15-20 minutes until golden brown.
- Make Lemon Curd Filling: In a saucepan, whisk together lemon juice, zest, sugar, butter, salt, eggs, and yolks over medium heat until thickened.
- Assemble and Serve: Pour lemon curd into baked crust. Cool completely before serving.
