- 1 cup crushed graham crackers
- 1/4 cup melted unsalted butter
- 2 tablespoons sugar
- 1 cup coconut cream
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon lime zest
- 1 can (14 ounces) sweetened condensed milk
- 1 tablespoon agar-agar
Instructions
- Prepare the crust by crushing graham crackers in a food processor. Mix with melted butter and sugar, then press into a greased 9×9-inch baking pan.
- For the filling, whisk together coconut cream, lime juice, lime zest, and sweetened condensed milk in a bowl. Gradually add agar-agar while whisking thoroughly.
- Pour filling over the crust and freeze for at least four hours until set.
- Allow to sit at room temperature for about 10 minutes before slicing into squares. Serve chilled.
