- 2 hard-boiled eggs, halved
- 1 cup cucumber slices

Instructions
- Boil water in a pot. Carefully add eggs and cook for 9-10 minutes until hard-boiled.
- Transfer eggs to an ice bath to cool, then peel and halve.
- In a shallow bowl, arrange cucumber slices, halved cherry tomatoes, and egg halves.
- Sprinkle with chives, salt, and pepper. Drizzle with olive oil or lemon juice if desired.
