Ingredients
- 4 cod fillets (about 6 ounces each)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 pounds baby potatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss halved baby potatoes with olive oil, salt, and pepper until evenly coated. Spread them out on a baking sheet.
- Roast the potatoes for about 25 minutes or until golden brown and tender, stirring halfway through.
- Meanwhile, melt the butter in a saucepan over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Stir in chopped parsley and season with salt and pepper.
- Drizzle olive oil over the cod fillets on a separate baking sheet; season with salt and pepper. Bake alongside the potatoes for about 12–15 minutes until the fish flakes easily with a fork.
- Serve the roasted potatoes alongside the cod drizzled with garlic butter sauce.
