- 1 lb flank steak
- 2 cups broccoli florets
- 2 cups baby potatoes (halved)
- 1 medium red bell pepper (sliced)
- 3 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh thyme
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, season sliced flank steak with salt, pepper, paprika, melted butter, minced garlic, rosemary, and thyme; toss to coat.
- In another bowl, combine broccoli, halved baby potatoes, and sliced red bell pepper; drizzle with olive oil and season.
- Spread veggies on a baking sheet; layer marinated steak on top. Drizzle any remaining garlic butter over everything.
- Roast for 20-25 minutes or until steak reaches desired doneness.
- Let rest for a few minutes before serving.
