- 1 chicken breast, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, diced
- 1 clove garlic, minced
- 1 tbsp soy sauce
- 1 cup cooked white rice
- 1 cup steamed broccoli florets
- 1 tsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add minced garlic and diced onion; sauté until fragrant.
- Stir in cubed chicken and cook until browned on all sides. Add sliced bell peppers, soy sauce, and optional spices. Cook for an additional 5-7 minutes until chicken is cooked through.
- While the chicken cooks, steam broccoli until bright green and tender. Mix steamed broccoli into hot cooked rice.
- Assemble by placing half of the broccoli rice in a bowl and topping it with the stir-fried chicken and vegetables.
