- 2 lbs ground chicken
- 1 cup panko bread crumbs

- ¼ cup milk
- 2 large eggs
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- ¼ cup chopped fresh parsley
- ¼ cup chicken broth
- 2 tablespoons butter, melted
- 1 tablespoon garlic powder
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together milk and eggs.
- Mix in panko, ½ cup of Parmesan, Italian seasoning, salt, and pepper until just combined.
- Sauté minced garlic in olive oil for 1-2 minutes until fragrant, then add to the mixture.
- Fold in ground chicken and parsley gently until combined.
- Shape the mixture into a loaf and place it in the greased pan.
- Brush with melted butter mixed with garlic powder and sprinkle with more Parmesan.
- Add chicken broth around the loaf and bake for 60-70 minutes until cooked through.
