- 12 oz rotini pasta
- 4 tbsp unsalted butter
- 4 cloves garlic
- 1 tsp Cajun seasoning
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 2 oz cream cheese
Instructions
- Boil rotini in salted water until al dente (about 10 minutes), drain, and set aside.
- Season chicken strips with Cajun seasoning, salt, and pepper; coat with Parmesan cheese.
- In a skillet, heat olive oil and butter over medium-high heat; sear chicken until fully cooked (5-7 minutes).
- Add half of the minced garlic for flavor in the last minute of cooking.
- Remove chicken; in the same pan, sauté remaining garlic briefly.
- Stir in heavy cream and chicken broth; bring to a simmer.
- Whisk in cream cheese, then add mozzarella and cheddar until smooth.
- Season sauce with Italian seasoning, basil, crushed red pepper flakes (if using), salt, and pepper.
- Toss cooked rotini into the sauce until evenly coated.
- Serve hot, garnished with chopped parsley.
