Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 tbsp olive oil
- 4 tbsp unsalted butter, divided
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 12 oz twisted pasta (gemelli or fusilli)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan, for sauce
- 2 oz cream cheese, softened
- 1 tsp Italian seasoning
- 1 tsp dried basil
- ½ tsp crushed red pepper flakes, optional
- Fresh parsley or dried herbs, for garnish
Instructions
- Cook the pasta in salted water until al dente, then drain.
- Season chicken strips with Cajun seasoning and press Parmesan cheese into them.
- Sear chicken in olive oil and butter until golden brown; add minced garlic towards the end.
- In the same skillet, melt butter, sauté remaining garlic, then add cream and broth. Stir to simmer.
- Whisk in cream cheese and gradually add mozzarella, cheddar, and Parmesan until smooth.
- Combine cooked pasta with sauce to coat evenly; let simmer for a few minutes.
- Serve topped with chicken and garnish with parsley.
