  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2/3 cup whole wheat flour (for crumble)
  • 1/4 cup melted butter (for crumble)
  • 1/2 tsp cinnamon (for crumble)
  • 4 tbsp brown sugar (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners or non-stick spray.
  2. In a saucepan, reduce apple cider over medium heat until halved; whisk in melted butter and set aside.
  3. Whisk together brown sugar, eggs, Greek yogurt, and vanilla in a large bowl; mix in 1 cup of the apple cider mixture.
  4. In another bowl, combine whole wheat flour, spices, baking powder, baking soda, and salt; whisk well.
  5. Gently fold dry ingredients into wet mixture in two batches until just combined; fill muffin tins slightly more than two-thirds full.
  6. For the crumble topping, mix whole wheat flour, melted butter, cinnamon, and brown sugar; sprinkle over muffin batter before baking.
