- 2 cups apple cider
- 6 tbsp unsalted butter

- 2 tsp ginger
- 1/4 tsp cloves
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2/3 cup whole wheat flour (for crumble)
- 1/4 cup melted butter (for crumble)
- 1/2 tsp cinnamon (for crumble)
- 4 tbsp brown sugar (for crumble)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin pan with liners or non-stick spray.
- In a saucepan, reduce apple cider over medium heat until halved; whisk in melted butter and set aside.
- Whisk together brown sugar, eggs, Greek yogurt, and vanilla in a large bowl; mix in 1 cup of the apple cider mixture.
- In another bowl, combine whole wheat flour, spices, baking powder, baking soda, and salt; whisk well.
- Gently fold dry ingredients into wet mixture in two batches until just combined; fill muffin tins slightly more than two-thirds full.
- For the crumble topping, mix whole wheat flour, melted butter, cinnamon, and brown sugar; sprinkle over muffin batter before baking.
- Bake for 18-20 minutes or until toothpick comes out clean; cool slightly before serving.
