Instructions
- Marinate chicken chunks in olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper for at least 15 minutes.
- Preheat grill or grill pan over medium-high heat and cook marinated chicken for 6-8 minutes per side until charred and internal temperature reaches 165°F (75°C).
- In a mixing bowl, combine fresh mixed greens, halved cherry tomatoes, cucumber chunks, and diced red onion to create the salad base.
- For tzatziki sauce, mix Greek yogurt with grated cucumber, minced garlic, dill, lemon juice, olive oil, salt, and pepper until well combined.
- Assemble your bowl by layering salad base first then topping with sliced grilled chicken and a generous dollop of tzatziki sauce.
