Ingredients
- 2 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 cup Greek yogurt
- 1 small head romaine lettuce
- 1 cup cherry tomatoes
- 1 cucumber
- 1 red onion
- 1 cup feta cheese
- Fresh dill and mint (optional)
Instructions
- Marinate chicken in olive oil, minced garlic, oregano, lemon juice, salt, and pepper for at least 30 minutes.
- Grill chicken over medium-high heat for 4-5 minutes on each side until cooked through. Let rest before slicing.
- For tzatziki, mix Greek yogurt with grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper.
- Assemble the salad by layering romaine lettuce, cherry tomatoes, cucumber, red onion, feta cheese, and sliced grilled chicken. Top with tzatziki.
