  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp fresh dill, chopped
  • Salt & pepper

Instructions

  1. Prepare the Tzatziki: In a mixing bowl, combine Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, dill, salt, and pepper. Mix until smooth and chill.
  2. Cook the Chicken: Season chicken with olive oil and spices. Grill or pan-fry over medium heat for 6–7 minutes per side until cooked through (internal temperature 165°F). Slice into strips.
  3. Assemble Salad: Layer romaine lettuce in serving bowls and top with cucumbers, tomatoes, red onion, and chicken strips. Add chilled tzatziki on top.
