Ingredients
- 2 chicken breasts
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 1 clove garlic, minced
- 1 tsp lemon juice
- 1 tsp fresh dill, chopped
- Salt & pepper
Instructions
- Prepare the Tzatziki: In a mixing bowl, combine Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, dill, salt, and pepper. Mix until smooth and chill.
- Cook the Chicken: Season chicken with olive oil and spices. Grill or pan-fry over medium heat for 6–7 minutes per side until cooked through (internal temperature 165°F). Slice into strips.
- Assemble Salad: Layer romaine lettuce in serving bowls and top with cucumbers, tomatoes, red onion, and chicken strips. Add chilled tzatziki on top.
- Serve immediately for a refreshing meal.
