Ingredients
- 1 pound flank steak (or strip steak)
- 3 tablespoons olive oil
- 3 tablespoons red apple vinegar
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 4 large pita bread
- 1 cup fresh tomatoes, diced
- 1 cup cucumber, chopped
- 1 small red onion, thinly sliced
Instructions
- 1. Marinate the Steak: In a mixing bowl, whisk together olive oil, red apple vinegar, garlic, oregano, cumin, salt, and pepper. Add the flank steak, coat evenly and refrigerate for at least 30 minutes.
- 2. Preheat the Grill: Heat your grill or grill pan over medium-high heat.
- 3. Cook the Steak: Remove steak from marinade and grill for about 4-5 minutes per side until desired doneness.
- 4. Rest & Slice: Let the steak rest for 5-10 minutes before slicing thinly against the grain.
- 5. Prepare Tzatziki Sauce: Mix Greek yogurt with lemon juice, dill, and season with salt to taste.
- 6. Warm Pita: Lightly grill pita bread until soft.
- 7. Assemble Gyros: Layer sliced steak, tomatoes, cucumber, red onion, and tzatziki sauce on each pita.
