  • 8 to 10 boneless skinless chicken thighs
  • 1 cup plain full-fat Greek yogurt
  • 3 to 4 sprigs fresh dill
  • 1 minced shallot
  • 3 tablespoons minced garlic
  • Juice and zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

Instructions

  1. Pat dry the chicken thighs with paper towels and set aside.
  2. In a mixing bowl, combine Greek yogurt, dill, shallots, garlic, lemon juice and zest, salt, pepper, paprika, and oregano.
  3. Add chicken thighs to the marinade; toss until well-coated. Cover and refrigerate for at least 1 hour or overnight.
  4. Preheat your grill to 400°F.
  5. Place marinated chicken on the grill (smooth side down) and discard leftover marinade. Grill for 8 to 10 minutes total, flipping halfway through.
  6. Remove from grill and let rest for at least five minutes before serving.
