Instructions
- Preheat your oven to 425°F (220°C). Toss sweet potato wedges with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- Season chicken with olive oil, garlic powder, paprika, lemon juice, salt, and pepper. Grill on medium-high heat for about 6-7 minutes per side until cooked through.
- Combine diced avocado, cherry tomatoes, red onion, cilantro or parsley, lime juice, salt, and pepper in a bowl for the salsa.
- For a herbed yogurt dip, mix Greek yogurt with minced garlic, fresh dill or parsley, lemon juice, salt, and pepper.
- Assemble your bowl by layering grilled chicken with sweet potato wedges and topping with avocado salsa and herbed yogurt dip.
