Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato wedges with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Season chicken with olive oil, garlic powder, paprika, lemon juice, salt, and pepper. Grill on medium-high heat for about 6-7 minutes per side until cooked through.
  3. Combine diced avocado, cherry tomatoes, red onion, cilantro or parsley, lime juice, salt, and pepper in a bowl for the salsa.
  4. For a herbed yogurt dip, mix Greek yogurt with minced garlic, fresh dill or parsley, lemon juice, salt, and pepper.
  5. Assemble your bowl by layering grilled chicken with sweet potato wedges and topping with avocado salsa and herbed yogurt dip.
