Instructions
- 1. Preheat the oven to 425°F (220°C). Cut sweet potatoes into fry shapes, toss with olive oil, paprika, chili powder, salt, and pepper, then roast for about 25 minutes until crispy.
- 2. Season chicken breasts with salt and pepper, grill over medium-high heat for 6-7 minutes per side until cooked through (internal temperature should reach 165°F/74°C).
- 3. For the guacamole, mash avocados in a bowl, then mix in finely chopped red onion, lime juice, cilantro, and salt.
- 4. Assemble the bowl by layering sweet potato fries at the bottom, followed by sliced grilled chicken, avocado slices, cherry tomatoes, and guacamole on top.
