Ingredients

  • 1 cup cooked white rice (jasmine or basmati)
  • 1 chicken breast, cubed

  • Salt & pepper to taste
  • 1 avocado, sliced
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved

Instructions

  2. Toss chicken cubes in olive oil, garlic powder, paprika, salt, and pepper. In a non-stick skillet over medium-high heat, cook seasoned chicken for 6–8 minutes until golden brown and fully cooked.
  3. Slice the avocado and cucumber; halve the cherry tomatoes.
  4. In a large bowl, layer the cooked rice as the base. Add the grilled chicken on one side and arrange the sliced avocado, cucumber, and cherry tomatoes on top.
  5. Serve as is or drizzle with soy sauce, sesame dressing, or lemon juice for extra flavor.
