Ingredients
- 1 cup cooked white rice (jasmine or basmati)
- 1 chicken breast, cubed
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper to taste
- 1 avocado, sliced
- 1 cup cucumber, sliced
- 1 cup cherry tomatoes, halved
Instructions
- Cook the rice according to package instructions. Fluff with a fork and set aside.
- Toss chicken cubes in olive oil, garlic powder, paprika, salt, and pepper. In a non-stick skillet over medium-high heat, cook seasoned chicken for 6–8 minutes until golden brown and fully cooked.
- Slice the avocado and cucumber; halve the cherry tomatoes.
- In a large bowl, layer the cooked rice as the base. Add the grilled chicken on one side and arrange the sliced avocado, cucumber, and cherry tomatoes on top.
- Serve as is or drizzle with soy sauce, sesame dressing, or lemon juice for extra flavor.
