- 1 chicken breast

- Juice of lime

- Salt & black pepper to taste
- 1 red onion, thinly sliced
- 1 cup diced tomato
- 1 tbsp chopped cilantro
- Jalapeño (optional), finely chopped
- Avocado, sliced
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breast and let it marinate for at least 15 minutes.
- Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until fully cooked. Let it rest before slicing.
- Make the Salsa: While resting the chicken, combine red onion, diced tomato, cilantro, lime juice, jalapeño (if using), and salt in another bowl. Mix well and let sit for about 5 minutes.
- Assemble: On a serving plate, place sliced grilled chicken on top of salsa and avocado slices. Garnish with fresh cilantro.
