  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk
  • Salt & pepper to taste
  • 2 cups fresh lettuce leaves, chopped
  • 1 cup cherry tomatoes or diced tomatoes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. In a small bowl, mix olive oil, garlic, herbs, paprika, salt, pepper, and lemon juice. Rub this marinade onto the chicken breasts thoroughly. Let them marinate for at least 15 minutes.
  2. Boil the peeled and cubed potatoes in salted water until they are fork-tender (about 12-15 minutes). Drain them well. Then mash with butter, milk, salt, and pepper until they reach a creamy consistency.
  3. Preheat your grill pan or outdoor grill to medium-high heat. Cook each chicken breast for about 5-6 minutes on each side or until fully cooked through (the internal temperature should reach 165°F / 74°C).
  4. In a mixing bowl, toss together chopped lettuce and tomatoes. Drizzle with olive oil and lemon juice (or vinegar), then season with salt and pepper. Combine well.
  5. Serve each grilled chicken breast alongside a generous scoop of creamy mashed potatoes and a fresh garden salad on the side. If desired, garnish the mashed potatoes with fresh thyme for an added touch of flavor.
