Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp dried Italian herbs
- 1 tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp lemon juice
- 3 medium potatoes, peeled and cubed
- 2 tbsp butter
- 1 cup milk
- Salt & pepper to taste
- 2 cups fresh lettuce leaves, chopped
- 1 cup cherry tomatoes or diced tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice or balsamic vinegar
- Salt & pepper to taste
Instructions
- In a small bowl, mix olive oil, garlic, herbs, paprika, salt, pepper, and lemon juice. Rub this marinade onto the chicken breasts thoroughly. Let them marinate for at least 15 minutes.
- Boil the peeled and cubed potatoes in salted water until they are fork-tender (about 12-15 minutes). Drain them well. Then mash with butter, milk, salt, and pepper until they reach a creamy consistency.
- Preheat your grill pan or outdoor grill to medium-high heat. Cook each chicken breast for about 5-6 minutes on each side or until fully cooked through (the internal temperature should reach 165°F / 74°C).
- In a mixing bowl, toss together chopped lettuce and tomatoes. Drizzle with olive oil and lemon juice (or vinegar), then season with salt and pepper. Combine well.
- Serve each grilled chicken breast alongside a generous scoop of creamy mashed potatoes and a fresh garden salad on the side. If desired, garnish the mashed potatoes with fresh thyme for an added touch of flavor.
