  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil. Sauté chopped onion and minced garlic for about 2 minutes until fragrant.
  3. Add ground turkey to the skillet; cook until browned (about 5-6 minutes), breaking it up with a spoon.
  4. Stir in drained diced tomatoes, dried Italian herbs, salt, and pepper; simmer for 3-4 minutes.
  5. In the prepared baking dish, layer half of the sliced zucchini, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat these layers.
  6. Bake uncovered for 30-35 minutes until bubbly and cheese is golden. Allow to cool for 5 minutes before serving.
