- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
- In a large skillet over medium heat, add olive oil. Sauté chopped onion and minced garlic for about 2 minutes until fragrant.
- Add ground turkey to the skillet; cook until browned (about 5-6 minutes), breaking it up with a spoon.
- Stir in drained diced tomatoes, dried Italian herbs, salt, and pepper; simmer for 3-4 minutes.
- In the prepared baking dish, layer half of the sliced zucchini, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat these layers.
- Bake uncovered for 30-35 minutes until bubbly and cheese is golden. Allow to cool for 5 minutes before serving.
