- Optional: 1 cup sweetened shredded coconut
Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a mixing bowl, combine flour, sugar, baking soda, and salt. Add eggs, vanilla extract, and crushed pineapple with juice; mix until well blended. Fold in optional pecans and coconut.
- Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the frosting, beat softened cream cheese and butter until creamy; gradually add powdered sugar, vanilla extract, and pineapple juice until smooth.
- Assemble by layering frosting between cake layers and covering the top and sides.
