Ingredients
For the Banana Mixture
4 ripe bananas, about 1 1/3 cups (320 g), mashed
1 large egg
1 tablespoon vanilla extract (15 ml)
3 tablespoons light brown sugar (38 g)
2 tablespoons granulated sugar (25 g)
1 teaspoon ground cinnamon (2.6 g)
For the Dry Ingredients
1 teaspoon baking powder (4 g)
1 teaspoon baking soda (5 g)
½ teaspoon salt (2.5 g)
1½ cups all-purpose flour (white or white-whole wheat) (180 g)
For the Fat Component
2 tablespoons unsalted butter, melted (28 g) or substitute with 30 g applesauce
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas until smooth. Stir in the egg, vanilla extract, light brown sugar, granulated sugar, and ground cinnamon until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the banana mixture and stir until just combined. Do not overmix.
- Fold in the melted butter (or applesauce) until incorporated.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
