Ingredients
- 500 g chicken breast, cut into bite-sized pieces
- 1 cup broccoli florets
- 1 cup green beans, trimmed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- Salt and pepper to taste
- 1 cup cooked mixed rice (brown, wild, and white rice blend)
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden brown and fully cooked through (about 5–7 minutes). Remove the chicken from the pan and set aside.
- In the same pan, heat another tablespoon of vegetable oil. Sauté minced garlic for about 30 seconds until fragrant. Add broccoli florets, green beans, and sliced bell peppers; stir-fry for approximately 3–4 minutes until vegetables are tender-crisp.
- Return the cooked chicken to the pan with sautéed vegetables. Pour in soy sauce, honey (or maple syrup), sesame oil, salt, and pepper. Stir well for another 2 minutes until everything is heated through.
- Serve your Healthy Chicken and Veggie Stir-Fry over warm mixed rice.
