  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden brown and fully cooked through (about 5–7 minutes). Remove the chicken from the pan and set aside.
  2. In the same pan, heat another tablespoon of vegetable oil. Sauté minced garlic for about 30 seconds until fragrant. Add broccoli florets, green beans, and sliced bell peppers; stir-fry for approximately 3–4 minutes until vegetables are tender-crisp.
  3. Return the cooked chicken to the pan with sautéed vegetables. Pour in soy sauce, honey (or maple syrup), sesame oil, salt, and pepper. Stir well for another 2 minutes until everything is heated through.
