Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 parsnips, peeled and sliced
  • Broth (enough to cover meat and vegetables)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef cubes in batches until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onions and minced garlic until translucent, about 5 minutes.
  3. Return the browned beef to the pot along with sliced carrots and parsnips; stir to combine.
  4. Add enough broth to cover ingredients. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours until the beef is tender.
