Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 3 large carrots, peeled and sliced
- 3 parsnips, peeled and sliced
- Broth (enough to cover meat and vegetables)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef cubes in batches until browned on all sides. Remove and set aside.
- In the same pot, sauté chopped onions and minced garlic until translucent, about 5 minutes.
- Return the browned beef to the pot along with sliced carrots and parsnips; stir to combine.
- Add enough broth to cover ingredients. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours until the beef is tender.
- Check seasoning before serving, ladle into bowls, and enjoy!
