- 1 cup broccoli florets, chopped
- 1 small zucchini, shredded
- 1 red bell pepper, diced
- 1 ½ cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar or mozzarella
- ½ cup onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil (for greasing)
- Fresh parsley or chives (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
- Lightly steam or sauté broccoli, garlic, and onions until slightly tender.
- Shred zucchini and squeeze out excess moisture.
- In a large bowl, whisk together cottage cheese, eggs, salt, pepper, and optional paprika until smooth.
- Stir in prepared vegetables and shredded cheese until well combined.
- Pour mixture into the greased baking dish and smooth the top.
- Bake for 30–35 minutes until golden brown and set in the center.
- Allow to cool slightly before slicing; garnish with parsley or chives.
