- 1 can black beans (15 oz), drained and rinsed
- 1 cup low-sodium chicken broth
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add lean ground turkey or chicken and cook until browned.
- Stir in the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper to coat the meat evenly.
- Add diced tomatoes, black beans, and chicken broth; mix well.
- Bring to a simmer, then add cubed cream cheese. Stir until melted and incorporated.
- Finally, mix in shredded cheddar cheese until fully melted.
- Taste and adjust seasonings as needed before serving hot.
