Ingredients
- 1 medium zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 cup spinach
- 1 1/2 cups low-fat ricotta
- 1 1/2 cups shredded mozzarella
- 1/2 cup grated parmesan
- 1 egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté diced red and yellow bell peppers with spinach in a sauté pan for about 5-7 minutes until tender.
- In a mixing bowl, combine ricotta, egg, garlic powder, Italian seasoning, salt, and pepper; mix until well blended.
- In a baking dish, layer zucchini slices (or noodles), half of the sautéed veggies, half of the ricotta mixture, and half of the mozzarella. Repeat these layers once more.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until golden brown.
