  • 12 tablespoons milk, as needed for texture (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
  3. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients to form a dough.
  4. Roll the dough into small balls (about 1 inch), shape them into ovals, and press with a fork to create the classic pattern. Sprinkle tops lightly with sugar.

  6. For the filling, beat together creamy peanut butter and unsalted butter until smooth. Add powdered sugar and vanilla extract; mix until creamy, adjusting with milk for desired consistency.
