Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
- In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add this mixture to the wet ingredients to form a dough.
- Roll the dough into small balls (about 1 inch), shape them into ovals, and press with a fork to create the classic pattern. Sprinkle tops lightly with sugar.
- Bake for 8–10 minutes until lightly golden and allow cookies to cool completely.
- For the filling, beat together creamy peanut butter and unsalted butter until smooth. Add powdered sugar and vanilla extract; mix until creamy, adjusting with milk for desired consistency.
- Spread or pipe filling onto one cookie and top with another cookie to create sandwiches.
