- 85 g lukewarm milk (⅓ cup)
- 60 g lukewarm water (¼ cup)
- 6 g active dry yeast (about 2 tsp)
- 5 g honey (1 tsp) or sugar
- 25 g melted butter (1 ½ tbsp)
- 250 g all-purpose flour (2 cups)
- 5 g salt (about 1 tsp)
- 140 g cold butter for lamination (10 tbsp)
Instructions
- Combine lukewarm milk, water, and honey in a bowl. Sprinkle yeast on top and let it sit for about 5-10 minutes until bubbly.
- In another bowl, mix flour and salt. Add melted butter to the yeast mixture, then gradually combine with the flour mixture while mixing on low speed until combined.
- Knead the dough at medium speed until smooth. Place it in a greased bowl, cover, and let it rise in a warm area until doubled in size (1-2 hours).
- While the dough rises, pound cold butter between parchment sheets to create a thin rectangle. Chill it while the dough rises.
- Roll out risen dough into a rectangle, place chilled butter on one half, fold over, seal edges, and roll out again to laminate.
- Follow through with resting periods and bake until golden brown.
