  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • Diced bell peppers and frozen peas

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix ground meat, breadcrumbs, egg, garlic, soy sauce, pepper, and salt; form into small meatballs.
  3. Sear meatballs in a skillet until browned on all sides.
  4. In a saucepan, combine honey, soy sauce, ketchup, water, and garlic; heat until bubbling.
  5. Spread uncooked rice in the baking dish; add vegetables and pour chicken broth over it.
  6. Nestle seared meatballs into the rice mixture and drizzle with honey garlic sauce.
  7. Cover with foil and bake for 40 minutes; then uncover and bake for an additional 10–15 minutes until done.
