Ingredients
- 1 lb ground beef or ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/3 cup honey
- 1/4 cup soy sauce (low sodium preferred)
- 1 cup uncooked white rice
- 2 cups chicken broth
- Diced bell peppers and frozen peas
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a bowl, mix ground meat, breadcrumbs, egg, garlic, soy sauce, pepper, and salt; form into small meatballs.
- Sear meatballs in a skillet until browned on all sides.
- In a saucepan, combine honey, soy sauce, ketchup, water, and garlic; heat until bubbling.
- Spread uncooked rice in the baking dish; add vegetables and pour chicken broth over it.
- Nestle seared meatballs into the rice mixture and drizzle with honey garlic sauce.
- Cover with foil and bake for 40 minutes; then uncover and bake for an additional 10–15 minutes until done.
