  • 6 cloves garlic, peeled and smashed
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Pat the lamb shoulder dry and season generously with salt and pepper.
  3. Place smashed garlic in the bottom of a roasting pan.
  4. In a bowl, mix Dijon mustard and honey until combined.
  5. Brush the glaze evenly over the lamb shoulder.
  6. Place the lamb on top of the garlic in the pan and cover tightly with aluminum foil.
  7. Roast for about 4 hours or until tender; remove foil during the last hour for caramelization.
  8. Let rest for at least 15 minutes before slicing.
