Ingredients
- 3 lbs lamb shoulder, bone-in
- 6 cloves garlic, peeled and smashed
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
- Salt and pepper to taste
Instructions
- Preheat oven to 300°F (150°C).
- Pat the lamb shoulder dry and season generously with salt and pepper.
- Place smashed garlic in the bottom of a roasting pan.
- In a bowl, mix Dijon mustard and honey until combined.
- Brush the glaze evenly over the lamb shoulder.
- Place the lamb on top of the garlic in the pan and cover tightly with aluminum foil.
- Roast for about 4 hours or until tender; remove foil during the last hour for caramelization.
- Let rest for at least 15 minutes before slicing.
