Ingredients
- 3 lbs (1.4 kg) lamb shoulder, bone-in
- 6 cloves garlic, peeled and smashed
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 275°F (135°C). Pat the lamb shoulder dry and season generously with salt and pepper.
- Heat oil in a Dutch oven over medium-high heat. Sear the lamb on all sides until browned (about 4-5 minutes per side), then remove from heat.
- Scatter smashed garlic around the lamb. In a bowl, mix Dijon mustard and honey; brush over the lamb.
- Cover with a lid or aluminum foil and roast in the oven for about 4 hours or until fork-tender.
- Let rest for 15 minutes before slicing and serving warm with your choice of sides.
